Mushroom and Ham pasta sauce
Quick and delicious pasta sauce. I ran out of wine, so used beer instead, a really great substitute.
Ingredients:
- Small punnet of mushrooms
- Chopped leftover ham ( you can use bacon or seafood instead)
- 1 onion chopped fine
- 1 Yellow pepper chopped
- Garlic to taste
- Pinch of Thyme
- Basil finely chopped
- Veg stock cube.
- Half a glass of bitter beer
- Small carton of thick cream
- Salt to taste
- Black pepper to taste
- Pinch of cayenne to add zing, or leave it out if preferred.
- Pasta of choice, I like linguine.
- Grated Parmesan cheese for topping.
Method
- Boil pasta until al dente then drain and put aside.
- Fry onions in oil until opaque.
- Add garlic.
- Add ham and fry together.
- Add yellow pepper.
- Add mushrooms and cook until mushrooms are done but still have a bite to them.
- Add salt, pepper and herbs.
- Add veg stock cube.
- Add beer and bring to the boil, then simmer for about 10 minutes.
- Take the pan off the heat and add cream,
- Stir and slowly heat for a few minutes.
- Drain pasta and serve with sauce.
- Sprinkle parmesan on top.
