White Fish Wraps
INGREDIENTS
SERVINGS 4 to 6 UNITS
- 1⁄2 cup sour cream
- 1⁄2 cup mayonnaise
- 1⁄4 cup chopped fresh coriander (optional but very good!)
- 1 package taco seasoning mix, divided
- 1lb cod or 1 lb white fish fillet, cut into 1 inch pieces
- 2 tablespoons vegetable oil
- 2 tablespoons lemon juice
- 1 package flour tortillas (I use 8” tortillas)
- Squeeze of lime for sauce
- Shredded lettuce, shredded cheddar cheese and diced onions and tomatoes for toppings
DIRECTIONS
- SAUCE: Combine sour cream, mayonnaise, coriander and 2 tablespoons seasoning mix in small bowl and add a squeeze of lime.
- In medium bowl, combine fish, vegetable oil, lemon juice and remaining seasoning; pour into large heated skillet.
- Cook, stirring constantly, over medium-high heat for 4 to 5 minutes or until fish flakes easily when tested with a fork.
- Heat the tortillas, either in a microwave for about 10 seconds or heated in a fry pan. Spread tortillas with sauce, then add cooked fish and top with toppings.
( I used tilapia since that is what I had on hand. The fish was great and tender and tasted fresh.)
