Chilli Glazed Pork with Sweet Potato Mash
It’s a quick meal to make, low in calories and tastes lovely with a blend of flavours.
Ingredients:
- In a small bowl, place the Chill Powder, maple syrup, 1 tablespoon of Olive Oil, and Salt and Pepper.
- Brush the chops on both sides with the mixture.
- Heat a large frying pan and add them to it, frying each side for about 10 minutes and basting with the mixture, until cooked through, keep warm.
- Peel and slice the Sweet Potatoes and cook for about 15 minutes, then drain, then mash. Heat the one teaspoon of oil.
- In a medium frying pan and cook onion over a medium heat, until beginning to brown ( about 5 minutes), add the spinach leaves and cook until wilted,( about 2 minutes).
- Divide the Sweet Potatoes, between four plates, add the onion and Spinach mixture, and arrange a chop on top.
- If you don’t have Maple Syrup, you can use runny honey
