As the temperature drops and winter draws near, we have some pointers when it comes to getting a little more creative with your carrots. A little twist here and a dash of spice there can make a real difference to your soups and side dishes.

Butter Steamed Carrots with Toasted Cumin
Create these zesty, cumin flavoured carrots, for a seasonal and flavourful root vegetable side.
You’ll need:
- 40g butter
- 1 tsp cumin seeds
- 2 kg carrots
- 1 Orange
Carrot & Coconut Soup
This easy to make warming soup has a delicious creamy taste and a coconut edge that really brings this versatile veg to life. Try adding parsnip to make it sweeter if you like.
You’ll need:
- 1 tbsp sunflower oil
- 700g carrots, peeled and diced
- 1 onion, peeled and chopped
- 2 cloves garlic, finely chopped
- 1 tsp cumin seeds
- 1 litre vegetable stock, made from cubes
- 400ml light coconut milk
- 2 tbsp fresh coriander, chopped
- 1 tbsp desiccated coconut, toasted
Maple Roasted Roots
A great way to serve up a satisfying side during the colder months – with a warming maple ‘marinade’ and a clove kick to keep things cosy at mealtimes.
You’ll need:
- 800g carrots
- 800g parsnips
- 300g shallots
- 3 tblspn maple syrup
- 3 tblspn sunflower oil
- 1 pinch ground cloves
- 1 thyme sprigs
