Traditional American Blueberry Muffins
Easy to bake and a real crowd pleaser, these fluffy, American style muffins with blueberries and a hint of lemon are sure to delight friends and family alike.

You’ll need:
- 300g self raising flour
- 1tsp baking powder
- 150g sugar
- 1 lemon, zest only
- 150g blueberries
- 1 egg
- 225ml milk
- 50ml vegetable oil
What to do:
Heat the oven to 200C/ 180C fan and line a muffin tin with 10 paper cases.
Put the flour, baking powder, sugar, lemon zest and blueberries into a bowl and stir to combine.
In a jug, mix the egg, milk and vegetable oil with a fork until combined.
Pour the wet ingredients into the dry ingredients and stir. Don’t overmix, it’s fine to have a few lumps.
Divide between the muffin cases and bake for 20 minutes until they are risen and pale gold.
Leave to cool then keep in an airtight tin for up to 3 days.
