Ponzu, Tomato and Shallot Salad
This summery salad makes the most of seasonal produce, with a fun fusion Japanese twist!
Serves: 4 as a side, 2 as a main
Preparation Time: 5 minutes
You’ll need
2 tbsp soy sauce
Juice of 1 lime
2 tbsp rice vinegar
Dash of sesame oil
6 heritage tomatoes, finely sliced (we like Isle of Wight tomatoes)
4 round shallots, finely sliced into rings
2 tbsp mixed black and white sesame seeds
Few coriander leaves, picked
What to do
In a small bowl, whisk together the soy sauce, lime juice, rice vinegar and sesame oil.
Arrange the tomatoes on a large platter. Top with the shallot rings. Drizzle over the dressing and finish with a sprinkling of sesame seeds and coriander leaves.
