Roasted celery and blue cheese with walnuts
Great as a side for the festive table or equally good as a light lunch. You choose!
Serves: 6 as a side
Preparation time: 10 minutes
Cooking time: 30 minutes
You’ll need
4 bunches of celery – 3 halved, 1 finely diced
2 tbsp extra virgin olive oil
5 tbsp honey
Salt and pepper, to taste
500ml cider
150g blue cheese
25g walnuts
Fresh parsley, chopped
What to do
Preheat the oven to 220°C.
Arrange the celery halves in a large baking tray – you may need to trim the tops to fit. Drizzle with the oil and 3 tbsp of the honey. Season with salt and pepper. Pour the cider into the tray and roast until the celery begins to brown, about 25-30 minutes.
Meanwhile, in a small bowl mix together the blue cheese, walnuts, parsley, and remaining celery. Season with pepper.
Spoon the cheese mixture over the cooked celery halves, drizzle with the remaining honey, and serve.
