Sweet Cherry Sorbet
This delicious sorbet recipe is just the thing for a summer heatwave!
It preps quickly and can be frozen over the course of the day to be enjoyed after dinner.
Split the mixture into two trays to help it freeze quicker.
Serves: 4 Prep time: 20 minutes Freeze time: 8 to 9 hours to freeze mixture
You’ll Need
- 4 cups Northwest fresh sweet cherries, pitted and halved
- 1/2 cup sugar
- 1 tbsp lemon juice
- 1 cup club soda
Method
- Puree cherries, sugar and lemon juice in food processor or blender.
- Pour into 2-quart saucepan; bring to a boil and cook 3 minutes. Cool thoroughly.
- Stir in club soda.
- Pour into shallow 8-inch baking pan; freeze 1-1/2 hours or until edges are solid but center is slushy.
- Spoon frozen mixture into food processor or blender; process to a coarse texture.
- Freeze 1-1/2 hours or until edges are solid but center is slushy. Repeat processing step.
- Freeze 6 hours or longer.
