How to make a batch of crowd-pleasin’ Parkin for Bonfire Night

Parkin is a must-bake tradition for Bonfire Night up north, so we thought we’d go back to our Yorkshire roots and spread the word to the rest of the country with a handy recipe for this delicious, heart-warming gingerbread cake.

Parkin Recipe (serves 14)

Ingredients

  • 255g plain flour
  • ¼ tsp salt
  • 2 tsp allspice
  • 2 tsp ground ginger
  • 1 tsp bicarbonate of soda
  • 225g medium oatmeal
  • 175g black treacle
  • 150g sunflower spread
  • 100g light brown soft sugar
  • 150ml milk
  • 1 egg, beaten
