World Porridge Day: 3 porridge recipes – one for every occasion
From Ready Brek to fancy grains and rainbow toppings, is it even possible to beat a warming bowl of porridge in the morning come autumn and winter?
As it’s World Porridge Day, here are a few ideas so you can match your morning porridge to your mood.
For each, start with a basic porridge mix: Add 50g porridge oats, 350ml milk or water and a pinch of salt to a saucepan. Bring to the boil on the hob, before turning down and leaving to simmer for four to five minutes (serves one).
1. An extravagant porridge for when you need a bit of luxury
First of all, swap your standard milk/water for rich coconut milk, then indulge yourself. Pop in a mashed-up banana, a spoonful of Nutella or a grating of dark chocolate, throw in some chopped pecans or macadamia nuts, add a smattering of granola, a drizzle of maple syrup, some pomegranate seeds for colour and a dollop of greek yoghurt. Think pudding, just before 9am.
2. A healthy porridge for when you need to feel invigorated
If you want to kick-start your day with a breakfast full of zing that’ll fuel you until lunch, go big on nuts and berries. Boost your protein levels with a spoonful of peanut butter swirled through your oats, pile on the blueberries, blackberries and raspberries, chuck in some nutrient-rich chia or flax seeds, sprinkle with pumpkin seeds or chopped almonds, and dust with coconut shavings.
3. A comforting porridge for when you need to feel soothed
Carrot cake porridge will not only provide the pleasure of eating the teatime cake, but is full of spices that’ll ward off colds and winter blues. Add a handful of the grated root veg to your oats, then load up on cinnamon, nutmeg and a grating of fresh ginger, as well as some crumbled walnuts and a sprinkling of raisins. Top off with a dollop of creme fraiche and some lemon or orange zest. It’s basically a hug in a bowl, but healthier and more filling than a slice of actual cake.
