Kiwi fruit and Tofu Steamed Buns
Asian inspired steamed buns are a fun and delicious light lunch. Filled with yellow kiwi, carrots and tofu this vegan option is a delight.

What you need
6 pre-made buns for steaming
2 Kiwi fruit (we used Zespri SunGold)
Rainbow carrots, sliced
Radish, sliced
Coriander
Tofu, either pre-sliced and marinated or smoked
Mayonnaise (we used Shiracha Mayonnaise)
Peanuts, crushed
1 red chilli, sliced
What to do
Carefully slice your kiwi fruit and vegetables and roughly tear the coriander.
Cut a circular piece of baking parchment big enough to fully line your steamer.
Over a pan of boiling water place your bamboo steamer and carefully place your buns inside and cover with the lid for roughly 8 minutes.
While the buns are steaming fry your tofu in a little oil on a medium heat, turning every so often until crispy.
The buns should have risen and be light and fluffy looking. Remove them from the steamer.
Fill your buns with the sliced vegetables, the tofu and the kiwifruit. Drizzle in the shiracha mayonnaise and sprinkle with coriander, chilli and peanuts.
Serve immediately.
