Coconut cakes topped with kiwi
These easy to make coconut cakes will surely give a welcome boost to the afternoon lull and with the healthy addition of kiwi you could so easily convince yourself to have more than just one! Delicious.

What you’ll need:
230g butter, softened
200g caster sugar
4 large eggs
160g desiccated coconut
160g self-raising flour
4 SunGold kiwis
What to do:
Pre-heat the oven to 180°C/gas mark 4.
Cream together the butter and sugar until pale and fluffy. Whisk in the eggs, one by one until fully incorporated and then stir in the desiccated coconut, followed by the flour.
Spoon into the muffin tin cases until ¾ full.
Cut each kiwi into slices and then place a slice on top of each cake.
Bake in the oven for around 20-25 minutes, until golden brown and cooked through.
Leave to cool before taking them out of the tin.
