Italian Chicken with Peppers and Potatoes

Hello everyone - I thought I would share one of my favourite Italian one pots, made in the slow cooker.


Not many ingredients good to eat healthy and cheap and best of all can freeze this a portion another day.


INGREDIENTS


Organic Chicken Thighs skinless or with bone in it - remove skin - two per person

Onions chopped

One jar or carton of Passata

Small Bag of baby Potatoes diced

Two Red Peppers per person or use mixed, diced up chunky

Herbs used Parsley a half a bunch or dried herbs - Rosemary and Thyme half a teaspoon each.

Stock cube

Paprika One tablespoon.

Seasonings Black Pepper no Salt in stock cube if you get an organic one still has salt in it.


Notes some additional alternatives or changes you can do with this. Use Jars of ready roasted Red Peppers dice up instead of Peppers. Use Tinned Potatoes if none available, Understand nothing wrong using tinned products. One other no Passata use good jar of Pasta Sauce some varieties brands Italians use are worth the money often better much more healthy. Look on line.


I buy all my Pasta Sauces Pasta Ingredients bulk buys online cheaper many organic. I also use diced up Onions and often a time saver. Please by all means use dried herbs I do all the time if I can get fresh use them or not. One bit of advice use Food processor or Blender to make sauce easy portion and a sauce for another day if you so wish to stores great in the fridge.


METHOD


Season Chicken with Black Pepper a half teaspoon of Paprika and touch of salt. Easier to use a freezer bag add Chicken and seasonings close shake and coat. Very much easier to do all meat this way.


Add to warmed up slow cooker on the low setting.

Can switch this on first does help a bit get it started.

Add Potatoes and Peppers.

Blender or Food processor add Passata herbs and Paprika use half a teaspoon.

Stock cube add touch of water. Blitz up. Use a bowl to pour in sauce then you can ladle this out to cover meat and vegetables.

Cover and on low for four hours depends on you size of your slow cooker.

Check and if need to add some more additional time.


Hope you all enjoy. You can adapt this to Pork or Turkey. Add Tins of Cherry Tomatoes. Add Pulses Cannellini Beans or Chickpeas.
