Mothering Sunday falls on 22nd March so celebrate with a delicious 3-course feast the whole family can enjoy, with a bonus breakfast option too. 

This menu is all about saving time by prepping ahead. Each dish has elements that can be made in advance so you don’t need to spend too much time working in the kitchen away from your family.

We start with this super speedy latte French toast breakfast. For lunch try this tasty potato and smoked salmon pikelet starter you can make-ahead of time, followed by this mouth-watering chicken wrapped in bacon with leeks one pot dish which saves on the washing up!

Finally, serve up this twist on an all time classic with this banoffee pie recipe. This elegant treat can be prepared the day before.

Potato Pikelets, Smoked Salmon & Creme Fraiche with Shallot Sauce

Try these tasty potato pikelets for a perfect starter to your Mother’s Day feast. You can make larger pikelets, or make them in smaller blini-size portions so there’s plenty of room for three courses. If you prefer a lighter lunch or a meat-free lunch then larger pikelets served with a side salad or fresh asparagus would make a great alternative to a heavier main course.

Bacon-wrapped chicken with leeks, peas & basil

This is a delicious seasonal recipe for bacon-wrapped chicken with leeks, peas and basil, which is simple to make and looks amazingly colourful too! It makes a change from a Sunday Roast but doesn’t compromise on the flavour.  It can be served with creamy mashed potatoes or roast potatoes if you prefer.

Banoffee Pie with a Twist

Not much compares to the unctuous, sweetly satisfying taste of a good old Banoffee Pie, but this version with the addition of an iced coffee twist seems to do the trick just nicely, so much so that you’ll be hard pushed to stop at just one slice!
