Almond recipes for a tasty bake off
October is a tasty time of the year, thanks to the nation’s love of baking up a batch of cakes, biscuits and puddings to see us through the darker nights and chilly weekends.
Almonds are in season too, so here are two of our favourite ways to make the most of them.
Blackberry Bakewell Cake
A little twist on the classic Bakewell recipe, this one uses blackberries you might have leftover in the freezer from your summer brambling expeditions.
You will need:
- 150g unsalted butter
- 150g caster sugar
- 3 eggs, beaten
- 1 tsp almond extract
- 100g ground almonds
- 80g self-raising flour
- 200g blackberries
- 30g flaked almonds
- 2 tbsp Demerara sugar

Almond-y Birthday Cake
A beautiful twist on the classic birthday cake – make the best of the season by decorating with fruits that are ripe at this time of year – or any leftover ones in your freezer.
You will need:
- 225g Stork Original
- 200g light brown sugar
- 4 medium eggs
- 225g self raising flour, sieved
- 2 tsp baking powder
- 85g flaked almonds
- 400ml double Elmlea
- 250g seasonal fruit, e.g. grapes, mandarins, peaches, strawberries and blueberries
- 1 pack candles, to decorate (optional)
