Staying healthy and planning workday lunches can be a challenge any time of year.
If you’re tired of the same old sandwich day in and day out, here’s a few of our favourite recipes from around the web worth trying – you can make most of them ahead in batches, saving you extra time and effort in the morning.
Cous cous salad
One big batch of cous cous salad made on Sunday evening can see you through the week. Cous cous cooks in just minutes and you can add everything from vegetables to chicken and feta cheese. One of our favourites is this savoury Southwest cous cous salad.
Vegetarian chilli
Vegetarian chilli is another make-ahead favourite you can enjoy all week. Instead of prepping a new lunch each morning, one evening of effort will see you through several lunches. This dish is especially delicious when you want something that’s hearty but still healthy. This recipe can be ready in under an hour.
Mediterranean pasta salad
Mediterranean flavours like feta, olives, peppers and aubergine taste delicious mixed together and can be thrown together in less than the time it takes to cook the pasta.
