Guacamole 3 ways
This classic Mexican dip is healthy, flavourful and utterly addictive – they taste great with tortilla chips, on sandwiches and with fajitas.
While the recipe is simple, it’s also fiercely debated among guacamole lovers – each has their own method for subtly tweaking the flavours to get the perfect result.

Classic Guacamole
Easy and delicious, this recipe is a classic for a reason – use fresh ingredients for a bright, flavourful spread and you’ll impress even the pickiest eaters.
You’ll need
- 3 ripe avocados
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- ½ lime, juiced
- handful of chopped coriander
- salt to taste
- 3 mild chillies, finely chopped
Method
- Add your onion, tomatoes, coriander, salt and chillies in a pestle and mortar and pound into a fine paste. If you don’t have a pestle and mortar, use a food processor or blender instead.
- Add avocados and lime to the mixture and mash together using a fork – choose a creamy or chunky consistency to your preference. Serve immediately.
Grilled Guacamole
This recipe swaps out coriander for basil and tomatoes for parmesan, giving it a uniquely Italian twist. Grilling the avocados before you mash them helps bring out the flavour and give this recipe a real bite.
You’ll need
- 3 ripe avocados
- 1 lemon, juice and zest
- ¼ cup fresh basil, roughly chopped
- ½ cup grated Parmesan
- A drizzle of olive oil, plus more for grilling
- Pinch of salt and pepper
- 1 large clove garlic, minced
Method
- Half and pit your avocados, drizzle with olive oil and lemon juice and sprinkle over salt and pepper. Place the avocado halves cut side down on a griddle pan on a medium heat and cook for five minutes or until toasted grill marks begin to appear.
- Remove the avocado halves from heat and scoop the flesh out into a bowl. Mash to a chunky consistency with a fork.
- Stir in the lemon zest, olive oil, basil, and parmesan and mix thoroughly. Serve immediately.
Tropical Guacamole
This bright, vibrant guacamole is packed with pineapple and mango – it’s an excellent choice as part of a serving platter or a great alternative if you’re making fajitas or other Mexican dishes but aren’t in the mood for anything spicy.
You’ll need
- 3 ripe avocados
- ½ cup pineapple, finely chopped
- ½ cup mango, finely chopped
- ¼ cup red onion, finely chopped
- ½ lime, juiced
- 1 garlic clove, minced
- Pinch of salt and pepper to taste
- 2 jalapeno peppers, seeded and finely chopped
Method
- Half and pit avocados and scoop out into a medium-sized bowl. Roughly mash avocados to desired consistency.
- Add remaining ingredients and stir to combine. Serve immediately.
